Punjabi Sarson Ka Saag Aur Makki Ki Roti
Sarson da saag or Sarson Ka Saag (सरसों का साग) Aur Makki ki roti (मक्के की रोटी) is an authentic recipe of Punjab. Sarson Ka Saag is traditionally eaten with Makki ki Roti aka a flatbread made with corn.
Sarson ka Saag Recipe (Punjabi village style)
Ingredients:
- Mustard Leaves (Chopped)
- Spinach (Chopped)
- Green Chillies (Chopped)
- Cumin Seed
- Ginger
- Tomato
- Chilli powder
- Salt as per taste
- Butter
- Coriander powder
- Pepper powder
Instructions:

Boil water in a deep pan or pressure cooker and add green mustard leaves, spinach, green chilies add a little salt, and cook it for 4-5 minutes or 2-3 whistles.

Strain the water and blend it coarsely by hand or by hand blender.

Heat butter in a pan and add cumin seeds and let them crackle. now add ginger, chopped finely saute on a medium flame, add tomatoes finely chopped and saute on medium flame till tomatoes are mushy.

Now add the blended mustard and spinach leaves, chili powder, Coriander powder, Pepper powder, and adjust salt according to taste.

You Sarson Ka Saag is ready now we need Makki Ki Roti which goes best with it.
Makki Ki Roti Recipe
Ingredients:
- 2 cup Maize flour
- 1/2 cup warm water
- 1/2 tsp salt
- Coriander leaves chopped (Optional)
Instructions:

Take all the ingredients in a large bowl. and knead the dough to make roti.

Make the dough a little hard and should tight enough together so that rotis can be made easily.

Keep it covered for half an hour. Now take a tennis ball size dough in hand and roll it on board to make roti. If you are finding it difficult to roll it you can use wax paper to easily roll it.

Maize dough is hard to roll as roti so be careful and try to make it as thin as possible.

Now place the roti on the griddle gently and roast both sides well. You can apply butter like you do on paratha or can roast it directly on the flame.

Serve it hot with butter on top.
