Kaju Barfi or Kaju Katli – Cashew Fudge Recipe

Kaju Katli (काजू कतली), Kaju Katari or Kaju barfi (काजू बर्फी), is an Indian dessert similar to a barfi. Kaju means cashew nut in Hindi. Diwali is about to come and Diwali means sweets and desserts. This is one of the favorite Indian sweets loved among all.

Ingredients:

  • Kaju (cashews) piece 250 g
  • Water, 50 ml
  • Sugar 125 g
  • Varak (silver foil), 3-4 sheets (optional)

Preparation:

  • Grind Kaju (cashews) to a fine paste (powder). Do not add any water while grinding. Keep aside.

  • Take sugar in a pan and add water. Boil till a single thread syrup is formed, about 3-4 minutes after the syrup starts boiling.

  • Mix Kaju paste into the syrup, break balls (lump) with a spoon moving it in a circular motion, stir well. Switch off the burner and let it cool so that it becomes thicker.

  • Transfer it to a greased surface and roll it with a rolling pin to about 1/8″ thickness.

  • Let it cool and apply silver foil gently.

  • After about 1-2 hours, cut the Katlis into a diamond shape.
